The Katai Santoku knife 14 cm from Forged is the Japanese version of the chef's knife. The word "santoku" means "three virtues," referring to the three cutting functions the knife offers: slicing, dicing, and chopping. This versatility makes it an all-rounder in the kitchen. Unlike most series from Forged, the Katai knives are made from Japanese VG10 steel with a hardness of 60 Rockwell. All Katai knives from Forged are hand-forged in 5 layers and feature a blade thickness of 2 mm and a cutting angle of 18 degrees.
