The word "santoku" means "three virtues," referring to the three cutting functions that the knife offers: slicing, dicing, and chopping. This versatility makes it an all-rounder in the kitchen. The Sebra knives from Forged are made from Japanese 440C steel with a hardness of 58 Rockwell. All knives from Forged are hand-forged, have a blade thickness of 2 mm, and a cutting angle of 18 degrees.
